Oatmeal Fudge Bars
Ingredients
- Oat Layer
- 1 ½ cup old fashioned oats
- ½ cup all purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Pinch of cinnamon
- Pinch of nutmeg
- 2 tablespoons unsweetened shredded coconut
- ¾ cup softened butter
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- Fudge Layer
- 1 can sweetened condensed milk
- 2 teaspoons cocoa powder
- 1 tablespoon butter
- 1/2 cup chocolate chips – semi-sweet or bittersweet
- Pinch of cinnamon
Instructions
- Place parchment paper into the bottom and up along the sides of an 8x8 baking dish, ensuring to leave some overhang on the sides. Set aside and preheat oven to 350.
- Combine oats, flour, baking powder, salt, cinnamon, nutmeg and in a bowl and set aside.
- In a separate bowl, or using a stand mixer, cream butter, sugar and vanilla until smooth.
- Add oat mixture and stir to combine.
- Place two thirds of the oat mixture into the bottom of your prepared baking dish and smooth into an even layer. Reserve the remaining oat mixture.
- Make fudge layer by placing all ingredients into a sauce pan over medium low heat. Stirring consistently, cook until chocolate is fully melted and mixture is well combined.
- Pour fudge over oat layer.
- Take spoonful’s of remaining oat mixture and dollop over the fudge layer.
- Place in preheated oven and bake for 25 to 30 minutes.
- Once baked, allow to sit in pan for 5 minutes and then lifting the sides of parchment paper, remove from pan and place on cooling rack to cool completely.
- Cut into bars and serve.
